Joseph’s Bread from OPA Taverna

Ingredients
2 cups water  
2 pounds flour 
½ cup corn flour 
1 package/1Tbsp yeast 
1 Tbsp sugar 
1 ½ Tbsp salt 
1 ½ Tbsp Extra virgin olive oil 
1/3 cup Kalamata olives 
2 Tbsp dillweed 
2 tbsp caraway seeds 
½ tsp anise seed 
½ tsp thyme 
1 tsp oregano 

Instructions:

Proof the yeast with sugar & warm water.  Add all the other ingredients and mix thoroughly.  Knead the dough for at least 15 minutes and place in a large dish, coated with oil.  Let dough rise until it doubles in volume.  Cut 9oz of Dough and roll as a ball.  Repeat until all the dough is gone.  Let them rest for 15 minutes and roll into the shape of a baguette.  Brush with egg and sprinkle with black and white seasoning seeds.  Bake at 350.F for 25 minutes or until the bread is golden brown.  Cool & Serve.
