Ingredients
6 Baby Zucchini
6 large Slices of Smoked Salmon
12 Med Asparagus (Blanched)
6 Tbsp Cream Cheese
Zucchini Marinade
¼ Cup Olive Oil
½ Cup Balsamic Vinegar
1 Tbsp Minced Garlic
3 Tbsp Basil
½ Tsp Salt
1 Tsp Black Pepper
Split baby zucchini lengthwise. Marinate for 20 minutes.
Then mark on hot grill. Let chill for 30 minutes.
Blueberry Salsa
½ Pint Blueberries
1 Tbsp Minced Red Onion
1 Tbsp Minced Bell Peppers
2 Tsp Honey
1 Tbsp Olive Oil (Extra Virgin)
1 Tbsp Balsamic Vinegar
1 Pinch Salt & Pepper
2 Tsp Cilantro
Mix together in a bowl. Let set for 30 minutes.
Roll Asparagus & Smoked Salmon then arrange on plate as shown in photo. Serves 6.
