Lobster Gazpacho

Ingredients
12oz- Lobster Meat- cooked and chopped fine
1- Cucumber, peeled & seeded-chop fine
1 med. – Onion, chop fine
1 med. – Red Pepper, chop fine
1 med. – Green Pepper, chop fine
1 med. – Yellow Pepper, chop fine
3 large- Tomatoes- chop fine, save juice
2oz-Cilantro- chiffinade
4 Tbls – White Balsamic Vinegar
8 Tbls – Olive Oil
Juice from one lemon
2 Tbls – FRANK`S REDHOT"CHILI`n LIME" SAUCE
1 tsp – Sugar
Salt & Pepper to taste
1 Avocado – fine dice 

Directions
Mix all ingredients and fold in lobster meat and chill
Garnish soup with Diced Avocado
