A very tasty side dish from the South of France. Ideal with grilled meats and barbeques.
Ingredients
4 Capsicums: 1 each of green, yellow, orange and red, cut into 1 in pieces
1-2 large onions, roughly chopped
4 zucchini, sliced
1eggplant (aubergine), cut into 1 in pieces
3-4 tomatoes, either fresh or good quality tinned, peeled and chopped
2-3 cloves of garlic, crushed
1 tbsp olive oil
fresh basil, 10 leaves
1 tsp, oregano, fresh or dried
salt and pepper to taste
Directions
1. braise the onions in the heated oil
2. add the capsicums, garlic and stir
3. leave to cook for 5 minutes, than add the eggplant, zucchini, oregano and a halve of the basil
4. pour the the tomatoes over it, season, stir and cover the pan leaving it to cook gently for 10-15 minutes
5. add the rest of the basil and serve. Delicious with grilled meats and barbeques
Tip: if you partially cook it the day before, it will bring out the flavor more.
