MINT PESTO LAMB CHOPS
Pesto is made with fresh mint and walnuts, then served with lamb chops and grilled tomatoes.

Yield: 6 servings
Pesto Ingredients:
1/2 cup chopped walnuts
1/2 cup chopped fresh mint leaves
1/3 cup olive or vegetable oil
2 tablespoons freshly grated Parmesan cheese
1/4 teaspoon coarsely ground pepper
1 teaspoon finely chopped fresh garlic
Lamb Chops Ingredients:
1/8 teaspoon salt
1/8 teaspoon coarsely ground pepper
2 tablespoons LAND O LAKES® Butter, melted
6 (1-inch thick) lamb loin chops
3 tomatoes, halved
2 tablespoons freshly grated Parmesan cheese
Heat gas grill on medium or charcoal grill until coals are ash white. Combine all pesto ingredients in medium bowl; set aside.
Combine salt, 1/8 teaspoon pepper and butter in small bowl. Brush lamb chops with butter mixture; place on grill. Grill, basting and turning occasionally, until fork tender (10 to 15 minutes). Spoon about 1 tablespoon pesto on each lamb chop. Place tomato halves on grill; spoon about 1 teaspoon Parmesan cheese on each tomato half. Continue grilling until heated through (2 to 4 minutes). Serve tomato half along side each lamb chop; serve with remaining pesto.
Broiler Directions: Heat broiler. Prepare pesto and lamb chops as directed above; place on broiler pan. Broil 3 to 5 inches from heat, turning once, until fork tender (10 to 15 minutes). Spoon 1 tablespoon pesto on each lamb chop. Place tomato halves on broiler pan; spoon about 1 teaspoon Parmesan cheese on each tomato half. Continue broiling until heated through (2 to 4 minutes). Serve tomato half along side each lamb chop; serve with remaining pesto.
