Mashed Potatoes….TWO Ways!
Mashed potatoes are everyone’s favourite side dish. Now with McCain Purely Potatoes® Potato Chunks mashed potatoes can be ready in just minutes. The washing, peeling and cutting is done for you! Try this recipe two ways: a low fat, low stress version for quick weeknight suppers or a more indulgent creamy version for Thanksgiving or holiday entertaining.

#1 – Low Fat, Low Stress Mashed Potatoes

Preparation Time: 10 minutes
Cook Time: 15 minutes

1 bag (750 g) McCain Purely Potatoes® Frozen Potato Chunks
2/3 cup (150 mL) low fat milk, warmed
1/3 cup (75 mL) fat-free sour cream
1/2 tsp (2 mL) freshly ground black pepper
1/2 tsp (2 mL) minced garlic
1/2 tsp (2 mL) onion powder
Sea salt
Fresh chopped chives (optional)
Microwave frozen potatoes in bag on High for 12 to 14 minutes or until tender. Let stand for 1 minute. Pour into a large bowl and add warmed milk and sour cream. Using a potato masher, mash until smooth. Stir in pepper, garlic and onion powder. Season with salt to taste and sprinkle with chives, if using.
Makes 4 to 6 servings.
Broth Option: Substitute low fat chicken stock or broth for the low fat milk.
Stovetop Option: Over saucepan of boiling water, place potatoes in a steamer basket and steam for 12 minutes or until very tender. Ensure there is a gap between the top of the water and the bottom of the steamer basket. Place in large bowl and mash using a potato masher. Season as per above directions.

#2- Indulgent Mashed Potatoes

Preparation Time: 10 minutes
Cook Time: 15 minutes

1 bag (750 g) McCain Purely Potatoes® Frozen Potato Chunks
1/4 cup (50 mL) sour cream
¼ cup (50 mL) butter, softened
½ cup (125 mL) half and half 10% cream, warmed
1 tbsp (15 mL) olive oil
½ tsp (2 mL) minced garlic
½ tsp (2 mL) each sea salt and freshly ground black pepper
Microwave frozen potatoes in bag on High for 12 to 14 minutes or until tender. Let stand for 1 minute. Press potatoes into a ricer or pour into a large bowl and, using a potato masher, mash potatoes. Add sour cream, butter, warmed cream, oil, garlic, salt and pepper and using an electric hand blender or mixer, beat gently until very smooth.
Makes 4 to 6 servings.
Tip: Try adding roasted garlic for an even richer tasting mash. Separate 1 head of garlic into individual cloves and toss with olive oil. Wrap tightly in foil and bake in a 350°F (180°C) oven for about 45 minutes or until garlic is soft. Once cool enough to handle, squeeze garlic out of its papery skin and mash cloves with a fork until smooth. Stir into mashed potato mixture.
Also consider adding your favourite cheese, herbs or seasonings.
