Pineapple-Glazed Ham

Pineapple and raisins create a slightly-sweet glaze for a succulent ham—perfect for the holiday table. 
 
Ingredients
 1 (14-pound) fully cooked semi-boneless sugar-cured ham 
 20 to 25 whole cloves 
 1/2 (15-ounce) package raisins 
 1 1/2 cups firmly packed light brown sugar 
 2 teaspoons soy sauce 
 1/4 teaspoon ground cloves 
 1 (20-ounce) can crushed pineapple in heavy syrup 
 Kale or other greens, for garnish (optional) 
 Fresh pineapple wedges, for garnish (optional)  


Directions
  
1. Preheat oven to 325F. Remove rind from ham and trim fat. Score the top and sides in a diamond pattern and stud with whole cloves.

2. Place ham, scored side up, in a large roasting pan and tent with foil. Bake until a meat thermometer inserted in center of ham and not touching bone, registers 150F, about 3 1/2 hours (or 15 minutes per pound).   

3. Drain pan drippings into a blender container. Add raisins, brown sugar, soy sauce and ground cloves. Process until pureed. Pour mixture into a medium saucepan. Stir in the undrained pineapple. Simmer, stirring occasionally, for 15 minutes.  

4. Brush ham with pineapple mixture. Return ham to oven and bake, basting with pineapple mixture every 10 minutes, for 1 hour longer.

5. Remove ham to a serving platter. Let rest 15 to 25 minutes before carving. Garnish with greens and fresh pineapple wedges, if desired. Makes 12 to 16 servings
