Phyllo Wrapped Apple Brie With Rosemary and Vanilla Apple Sauce

To Make Applesauce

3 sprigs – fresh Rosemary
3 caps – Vanilla
15 Apples
30oz  - Apple Juice
1 Cinnamon Stick
1/4  cup sugar

Procedure

1.In pot, add apple juice, chopped apples, sugar and cinnamon stick.
2.Cook until apples are soft.
3.Add rosemary and let cook for 5 minutes.
4.Strain sauce through China Cap and finish with vanilla.

 
Apple Brie Phyllo Wrap Method

Peel and core desired number of apples and cut in half and steam for a few minutes, until crsip/tender minutes

Cut equal amount wheels of Brie in half (leaving as a circle)

Take 2 sheets of phyllo pastry, cut in half and combine to make four layers

Lay out pastry sheets. Place the half wheel of Brie in the middle and place the apple on top of Brie. Sprinkle the apple with cinnamon (1/2 tsp) and brown sugar (1 tsp) Crimp up the sides of phyllo, brush with melted butter.  Place in a buttered ramekin while finishing the rest of the phyllo packages. 

When all are ready, remove from ramekin and bake at 350 degrees for approximately six minutes. On a plate pour 2 ounces of applesauce and place phyllo wrap on it.  Place a small scoop of French vanilla ice cream on top of pastry where the edges come together. Garnish with chopped walnuts, caramel sauce and cinnamon.
