Hot Chicken Salad

Cook Time: 2 – 3 hours Number of Servings: 4

 2 Cups Chicken or Turkey, diced
 1 1/2 Cups Celery, diced
 1 Cup Croutons
 1/2 Cup Almonds, slivered & toasted
 1 1/2 Tsp Parmesan Cheese, grated
 4 Tbsp Mayonnaise
 1 Tbsp Lemon Juice
 1/2 Tsp Salt
 1/4 Tsp Curry Powder
 1 Cup Potato Chips, crushed
 1/2 Cup Cheese, grated

Instructions:
In slow cooker, combine chicken, celery, croutons, almonds,
and parmesan cheese.  Toss to mix.  In small bowl, combine
mayonnaise, lemon juice, salt and curry powder.  Stir until well
blended.  Pour over chicken mixture.  Stir to coat thoroughly. 
Cover and cook on low for 2 – 3 hours.  Sprinkle with potato
chips and cheddar cheese.  Turn to high and cook another 20
minutes or until cheese melts.
Recipe can be doubled for larger slow cookers.  Excellent for a pot
luck or buffet.
