Pear Cranberry Crisp

Ingredients     
3  very ripe pears, peeled, cored, and cut into chunks    
1  cup whole cranberries    
1/4  cup maple syrup    
2  tablespoons fresh lemon juice    
1/2  cup rolled oats    
1/4  cup lightly packed dark-brown sugar    
1  tablespoon all-purpose flour    
1  tablespoon unsalted butter    
Creme fraiche, for serving 



Directions

1. Preheat the oven to 400*F. In a medium bowl, combine pears, cranberries, maple syrup, and lemon juice, and toss; set aside. In another bowl, combine oats, brown sugar, and flour. Cut in butter until the consistency resembles coarse crumbs and the dough just barely holds together. Spoon the cranberry mixture into an 8-by-8-inch baking dish, and spoon the dry mixture over it. 

2. Bake until the topping is brown and crisp, about 10 minutes. Reduce the heat to 350*F, and bake until the fruit is bubbling, 20 to 25 minutes more. Serve with creme fraiche.  Serves 4.
