Flavoured Teas are real teas blended with fruit, spices or herbs. Fruit flavoured tea such as apple or blackcurrant, is real tea blended with fruit peel or treated with the natural oil or essence. Spiced and scented teas using cinnamon, nutmeg, jasmine or mint, are also real teas blended with spices, flowers or other plants.

Herbal Infusions or Tisanes such as chamomile, peppermint or nettle, do not contain any real tealeaf. The term "herbal tea" is somewhat of a misnomer, since these products are not really tea at all. Herbal beverages or infusions can be derived from a single ingredient or a blend of flowers, herbs, spices, fruits, berries and other plants.

Tea recipes

Fresh brewed iced tea
Preparation
Insert 6 tea bags into a one-litre pitcher.
Pour 1 1/4 cups (300 ml) of freshly boiled water over tea bags.
Steep for five minutes. Remove tea bags.
Fill pitcher with fresh cold water.
Pour over ice. Garnish and sweeten to taste.
Once prepared, fresh brewed iced tea should be stored in the refrigerator.
*When preparing fresh brewed iced tea, double the strength of the hot tea since it will be poured over ice.
 
Chai (makes 1 cup)
Ingredients
1 tea bag or 1/4 tsp loose-leaf tea
1 tbsp (15 mL) EACH of ground ginger, ground black pepper and ground cardamom
1 tsp (5 mL) ground nutmeg
1/4 cup (50 mL) milk
Sugar to taste

Preparation
In a small saucepan, bring 3/4 cup (175 mL) water to a boil.
Add tea and let simmer 1 to 2 minutes.
In a small bowl, combine spices.
Add milk to tea and let simmer for 15 seconds.
Add 3 pinches of spice mixture to tea, simmer for 15 seconds.
