Smokehouse Beer Can Chicken

Ingredients

  1 - 3 lb chicken 1.5 kg            
  1/2 cup Knorr Smokehouse Mesquite Marinade 125 mL                      
  1 can premium beer  
  4 tbsp Hellmann's Smokey Bacon & Tomato Mayonnaise 60 mL
  1 lime, cut into wedges 
 
  Wash chicken, including cavity, with cold water; 
  pat with paper towel to dry.

Place in a large bowl and cover inside and out with 1/4 cup (50 mL) Knorr 
Smokehouse Mesquite Marinade. Let marinate at room temperature for 30 
minutes or covered, in refrigerator, overnight.

Preheat one side of the grill on high heat. Place lid down. Wash outside of 
beer can; dry. Pour out 1/4 of the beer from the can. Place can on a flat 
surface and insert chicken onto can, so can is wedged into the cavity and 
chicken stands upright. (Use legs to steady chicken if needed.) Tuck in wing 
tips to prevent burning. Discard any marinade left in bowl. 

Stand chicken on 
side of grill where heat is off; close cover. After 30 minutes, 
brush chicken 
occasionally using remaining 1/4 cup marinade. If any part of 
the chicken 
starts to over darken, cover with foil. Grill chicken for one hour or 
until juices 
run clear.
 
Let chicken rest for 10 minutes before removing from can. Serve, 
garnished 
with Hellman's Smokey Bacon & Tomato Mayonnaise and lime
wedges.
