Sweet Summer Fruit Bruschetta
24 baguette slices, cut 0.5 cm ( 1/4-inch) thick
60 ml ( 1/4cup) butter, softened
90 ml (6 tbsp) brown sugar
1 ml ( 1/4 tsp) cinnamon
125 ml ( 1/2 cup) chopped peaches or nectarines
125 ml ( 1/2 cup) chopped plums
30 ml (2 tbsp) fresh lime juice
30 ml (2 tbsp) chopped glazed walnuts
Lay baguette slices in a single layer on large baking sheet. Stir together butter, 60 ml (4 tbsp) brown sugar and cinnamon and spread on one side of each baguette slice.
Broil for 1 to 2 minutes or until bubbly and bread is lightly browned on the edges. Stir together remaining brown sugar, fruit and lime juice in a small bowl. Spoon equal amounts over the bread slices and sprinkle with walnuts. Makes 24 bruschetta, or 8 servings.
