Oven-Roasted Potatoes for 50

Ingredients
11 lbs potatoes, unpeeled    
1/2 cup canola oil    
6 Tbsp Italian seasoning    
1 Tbsp garlic powder    
   pepper to sprinkle on top 

Directions            
 Preheat over to 450 degrees F. Spray several baking sheets with Canola Oil 
spray. Slice potatoes into 3/8 inch slices. Arrange potatoes closely together in 
single layers. With a pastry brush, brush potatoes lightly with Canola Oil. 
Sprinkle with Italian seasoning, garlic powder and pepper. Cover pans tightly 
with foil and bake 15 to 20 minutes or until potatoes are tender. Turn oven up 
to 500 degrees F. Uncover potatoes and bake 30 minutes more or until 
potatoes are golden brown. Makes 50 servings.
Note: To reduce baking time, boil potatoes, slice, season them and arrange 
on baking pans. Bake at 500 degrees F 20 to 30 minutes.
