Lobster Quesadilla

Ingredients
12 oz – Lobster Meat, cooked
Filling
1 med. – Onion, chop fine
1 med. – Red Pepper, chop fine
1 med. – Green Pepper, chop fine
1 med. – Yellow Pepper
Green Onion, chiffinade
Cilantro – chiffonade
3 Tbls – FRANK`S REDHOT"CHILI`n LIME" Sauce
Oz- PC Marble Cheddar
PC unsalted Butter, soft
12 –PC 8" Flour Tortillas
nn Sour Cream
PC Salsa
 
Directions
Prepare filling by combining, onions, red, green & yellow peppers, cilantro and 
FRANK`S REDHOT"CHILI`n LIME" SAUCE. Chop Lobster in to 1/4" pieces.
 
Butter side of tortillas and place the butter side down, spread equal amounts 
fillings, lobster and cheese on all 12 tortillas and fold over to make a 1/2-moon shape.
You can refrigerate up to three hours.
 
Place on BBQ grill and brown on both sides and cut in 1/3rd and serve.
Accompany with Salsa and Sour Cream
