Cranberry/Orange Chicken

 1/2 Cup Flour
 1/8 Tsp Salt
 6 Whole EdenValley Boneless Breast, skinless
 4 Tbsp Margarine
 2 Cups Cranberries
 1/2 Cup Onion, chopped
 2 Tbsp Orange Peel, grated
 1 3/4 Cups Sugar
 1 1/4 Cups Orange Juice
 1/4 Tsp Ginger, ground
 1/4 Tsp Cinnamon, ground

Instructions:
Combine the flour and the salt and place in a plastic bag. 
Shake chicken, a few pieces at a time, in flour mixture.  Melt
margarine in a large skillet brown chicken on all sides.  In a 
saucepan, combine remaining ingredients; bring to a boil and
pour over chicken.  Cover and simmer for 1 hour.  Remove
chicken to a warm platter.  Bring sauce to a boil and cook,
stirring constantly, until thickened.  Serve over chicken.
