Raspberry Chicken

 1/4 Cup Onion, chopped
 4 Tbsp Raspberry Spice Vinegar
 1/4 Cup Chicken Stock
 1/4 Cup Sour Cream
 2 Tbsp Tomato,chopped
 To taste Fresh Raspberries
 4 Pieces EdenValley Boneless Breast, skinless
 2 Tbsp Butter

Instructions:
Sauté chicken in butter on high until golden (3 - 5 min. per
side).  Remove chicken.  Reduce heat.  Add onion, cook until
transparent.  Add vinegar, raising heat.  Cook until sauce is
reduced to a spoonful.  Whisk in stock, sour cream and
tomato.  Simmer over low for 1 minute.  Return chicken to the
pan and simmer until well cooked (8 - 10 min).  Serve at once.

Garnish with raspberries.
