Bake well in advance as this will improve it’s flavor and will become softer when stored
in an airtight jar and kept in cool place.
Ingredients
450g ( 16 oz ) plain ( all -purpose ) flour
1 level tbsp bicarbonate of soda
140g ( 5 oz ) ground almonds
450g ( 16oz ) honey
140g ( 5 oz ) unsalted butter
110g ( 4 oz ) very finely chopped lemon and orange peel
grated rind of 1 lemon ( unwaxed or organic )
2 level teaspoons of ground ginger
1 heaped teaspoon cinnamon
1/2 teaspoon of ground cloves
a pinch of ground cardamom
a pinch of ground nutmeg
Directions
Heat honey and butter gently until butter has melted, leave to cool . Sift the flour, bicarbonate of soda, ginger, cinnamon, cloves, nutmeg and cardamom into a mixing bowl.
Add the grated lemon rind, ground almonds and chopped peel. Pour the honey mixture over, knead it into a dough, if the mixture is too runny add some more flour. Roll out on a floured board and cut into a variety of shapes.
Bake for 8-10 minutes at 180 C ( 350 F / Gas 4 ) Glaze or decorate with icing.
