Sweet & Sour Chicken

 2 Tbsp Oil
 2 1/2 Pounds EdenValley Boneless Breast, cubed
 1 Whole Green Pepper, strips
 1/2 Cup Onion, sliced
 1 1/3 Cups Ketchup
 20 Ounce Can Pineapple Chunks, drain & reserve juice
 1/3 Cup Vinegar
 2 Tbsp Sugar
 1 Tsp Dry Mustard
 1/2 Tsp Ginger
 1 Tbsp Soya Sauce
 1/4 Cup Water
 1/2 Cup Carrots, sliced
 1 Tbsp Cornstarch
 1 Cup Tomato, diced

Instructions:
Brown chicken in hot oil, Remove from pan, set aside.  Add
pepper, onions, carrots to drippings and stir fry for 2 minutes. 
Add ketchup, pineapple juice, vinegar, sugar, mustard, ginger
and chicken.  Cover and simmer 35 minutes or until chicken is
tender.  Skim off fat.  Add tomato, pineapple and cornstarch
mixture.  Stir until heated through and sauce has thickened. 
Serve immediately.
