Sweet and Sour Chicken Stir Fry

 2 Large Carrots, sliced
 2 Stalks Celery, sliced
 1 Whole Green Pepper, strips
 1 Large Onion, chopped
 1 - 2 Cups Broccoli Florets, cut small
 2 Tbsp Sugar
 1/2 Cup Water
 1/4 Cup White Vinegar
 1 Cup Chicken
 6 Medium Mushrooms

Instructions:
Cut veggies into long bite size pieces.  In a large frying pan add
2 Tbsp. of oil, cut up chicken and cook until lightly brown.  Add
1/2 cup of water and bring to a boil, add salt and spices to
taste.  Add veggies to boiling water, cook until tender.  Add
more water if necessary.  Mix sugar, cornstarch, water and
vinegar to make sauce, add to veggies (make sure there is 1
1/2 cups of liquid in veggies before adding sauce).  This will
thicken very quickly.
You may adjust the flavor to your taste by adding more sugar or
vinegar.
