Ingredients
· 3 quince, yielding about 1 ½ cups when peeled, cored,
and diced into ½ inch pieces
· ¾ cup quinoa, rinsed
· 1 can (14 ounces) light coconut milk
· 1 cup water, reserved from boiling the quince
· 3 tablespoons brown sugar
· 1 cinnamon stick
Directions
Cover the quince with water in a two-quart pot and bring to a boil. Simmer for 5-10 minutes.
Drain—reserving one cup of the boiling water—and allow quince to cool. Peel, core, and dice into ½ inch pieces.
Add all of the ingredients to the same pot and bring to a boil. Immediately turn down the heat
to the lowest setting, and cook for 35 minutes—stirring every ten minutes to ensure uniform cooking.
Yields about 4 to 6 servings.
