Mango Strawberry Cheesecake

Ingredients: 

Cheesecake:

2 pkgs (8 oz/250 g each) soft Canadian Cream Cheese
1 2/3 cup (400 mL) sour cream
1 cup (250 mL) granulated sugar
1 cup (250 mL) pureed mango
1 cup (250 mL) crushed fresh or frozen strawberries
5 eggs, beaten
2 tbsp (30 mL) all-purpose flour

Graham-Cracker and Butter Cookie Crumb Crust:

1 cup (250 mL) crushed Graham crackers
2/3 cup (150 mL) crushed butter cookies
2 tbsp (30 mL) brown sugar
5 tbsp (75 mL) melted butter
Preparation:

Cheesecake:

In large bowl, mix together Canadian Cream Cheese, sour cream and sugar. Add pureed mangoes, strawberries, eggs and flour. Mix well until smooth. Pour mixture into Graham-Cracker and Butter Cookie Crumb Crust.

Bake in oven for 60 minutes at 325F (160C) or until toothpick inserted in centre comes out clean. Remove from oven and let stand for 1 hour before serving.

Graham-Cracker and Butter Cookie Crumb Crust:

Preheat oven to 350F (180C).

In bowl, mix together Graham-crackers, butter cookies and brown sugar. Blend in butter and mix well.

Press mixture into bottom of 12-inch (30 cm) springform pan .
Bake for 10 minutes. Remove from oven and let stand.
