Fried Hush Puppies

Ingredients:
1 cup cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 egg
½ cup buttermilk
½ cup minced onions
1 tablespoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
1/3 cup melted butter
1 cup olive oil for frying

Preparation:
1. Combine ingredients in large mixing bowl and mix well.
2. Pour enough oil into skillet or deep fryer to completely cover hush puppies.
3. Preheat skillet or deep fryer over medium heat or 375.
Test readiness of oil by dropping pea sized sample of batter in oil, if it spatters immediately it’s ready.
4. Take spoon, dip out batter and drop gently into hot oil.
5. Hush puppies are ready when they begin to float and turned a golden brown.
6. Remove hush puppies with strainer and place in serving bowl lined with paper towels.  Serves 6.
