Watermelon Baby Arugula, Feta Salad with Lemon Vinaigrette

Yes you can make friends with salad, especially when it is chalk full of fresh flavours. Next time you are in the mood for something light try this easy and health conscious concoction of melon and citrus. This tasty treat pairs perfectly with any light seafood that might find its way onto your grill this summer.

8 cups (2000 mL) baby arugula
2 cups (500 mL) watermelon, cubed
¾ cup (180 mL) feta, crumbled
¼ cup (60 mL) sunflower seeds, toasted & salted
A pinch of fresh cracked black pepper

1tsp lemon zest
2 Tbsp lemon juice
1 Tbsp rice wine vinegar
3 Tbsp extra virgin olive oil

1. Divide Baby Arugula among 4 serving bowls and top with watermelon cubes, crumbled feta and Sunflower Seeds.
2. In a small jar with a tight fitting lid, shake together dressing ingredients to blend well. 3. Drizzle over the salads and top each with fresh cracked black pepper.
