Tres Leche Homemade Ice Cream

Tres Leche is Spanish for three milks. This rich and creamy homemade ice cream is made with cream, milk and sweetened condensed milk.



Yield: 7 (1/2-cup) servings



Ingredients:
1 1/2 cups whipping cream
3/4 cup milk
2 Land O Lakes® All-Natural Eggs
2 Land O Lakes® All-Natural Egg yolks
1 (14-ounce) can sweetened condensed milk
1 tablespoon vanilla
1/3 cup Rich Buttery Caramel Sauce (see below for recipe)*




Directions:

Combine whipping cream and milk in 2-quart saucepan. Cook over medium-low heat stirring occasionally, until mixture just comes to a boil (8 to 10 minutes). Remove from heat.

Combine eggs and egg yolks in medium bowl. Beat at high speed until thickened and pale yellow. Slowly whisk 1/2 cup hot whipping cream mixture into egg mixture. Slowly pour egg mixture into remaining whipping cream mixture in saucepan, whisking constantly.

Reduce heat to low. Cook, stirring constantly, until mixture reaches 160°F. and is thick enough to coat back of metal spoon (2 to 3 minutes). (DO NOT BOIL.) Remove from heat.

Stir in sweetened condensed milk and vanilla. Pour into clean bowl. Cover; refrigerate until chilled (2 to 3 hours).

Freeze in ice cream maker according to the manufacturer’s instructions until desired consistency. Slowly pour caramel sauce into ice cream, while keeping ice cream maker running, until caramel is just swirled into ice cream. Serve immediately or store frozen in freezer container with tight-fitting lid. Serve with additional caramel sauce, if desired.

*Substitute purchased caramel ice cream topping.





Rich Buttery Caramel Sauce

This quick-to-make caramel sauce is delicious over ice cream and topped with pecans.

Yield: 2 1/4 cups


Ingredients:
3/4 cup sugar
3/4 cup firmly packed brown sugar
1/2 cup light corn syrup
1/3 cup Land O Lakes® Butter
2/3 cup whipping cream


Directions:
Combine all ingredients except whipping cream in 2-quart saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (5 to 10 minutes). Cool 5 minutes. Stir in whipping cream. Serve warm.
