Sugar Maple Planked Salmon

Ingredients:

1 sugar maple grilling plank
2-4 portions of salmon fillets
Olive or canola oil
Seasoning salt, to taste
Garlic powder, to taste
Dash of oregano
Dash of steak spice



Directions:


Soak grilling plank for about 2 hours prior to cooking. Preheat grill to 400 to 600°F (200 to 300°C), or high.

Moisten the salmon with olive oil. Sprinkle seasoning salt, garlic powder, a small amount of oregano and just a touch of steak spice on salmon.

Place soaked plank on hot grill and close lid. After about three minutes, when smoke develops, add oil to the plank, just enough so the salmon doesn't stick; lay salmon on the plank and close the lid. Adjust temperature to 350 to 400°F (180 to 200°C), or medium-high. Cook for 15 to 30 minutes depending on thickness (or desired doneness). Fish should be moist and flake easily with a fork. Makes 2 to 4 servings.

Caution: Plank will be very hot to the touch, and salmon will continue to cook after removing the plank from the grill.
