Dutch Apple Cake

Ingredients:
1 1/2 cups (375 mL) flour
1 tbsp (15 mL) baking powder
1/2 tsp (2 mL) salt
1/2 cup (125 mL) shortening
1 cup (250 mL) white sugar
1 egg
1 1/2 tsp (7 mL) vanilla
3/4 cup (175 mL) milk
Topping:
2 medium apples, peeled and cored
1/4 cup (50 mL) white sugar
1 tsp (5 mL) cinnamon
Directions:
Combine flour, baking powder and salt; set aside.
In a large bowl, cream shortening; add sugar gradually, beating as you go. Add egg and vanilla, beating until light.
Blend in dry ingredients alternately with milk, beginning and ending with dry ingredients.
Spread batter in greased 11x7" cake pan. Cut apples in 8 round slices. Place slices in rows on batter, with edges pressed in slightly.
Sprinkle sugar and cinnamon on top.
Bake in 350°F (180°C) oven for 50 to 60 minutes, until a toothpick inserted in centre comes out clean. Makes 6 to 8 servings.
