Mini Turkey Meat Loaves

Caramelized onions add the perfect touch of sweetness to these mini meat loaves.

Ingredients:

Meat Loaf
1 pound lean ground turkey*
1/3 cup seasoned bread crumbs
1 medium (1/2 cup) onion, finely chopped
1 rib (1/2 cup) celery, finely chopped
3 (3/4-ounce) slices Land O Lakes® Deli American Cheese, coarsely chopped
1/4 cup ketchup
1 medium carrot, grated
1 Land O Lakes® All-Natural Egg, slightly beaten
1 teaspoon dry mustard
1/8 teaspoon pepper

Topping
1 tablespoon Land O Lakes® Butter
1 large (1 cup) onion, thinly sliced

Sauce
1/4 cup ketchup
2 tablespoons firmly packed brown sugar
2 teaspoons dry mustard

Directions:

Heat oven to 350°F. Line 13×9-inch pan with aluminum foil; set aside.

Combine all meat loaf ingredients in medium bowl; mix well. (Use hands if necessary.) Form mixture into 4 (4×2 1/2×1-inch) loaves in prepared pan.

Melt butter in 10-inch skillet until sizzling; add sliced onion. Cook over medium heat, stirring occasionally, until onion is light golden brown (5 to 7 minutes).

Meanwhile, combine all sauce ingredients in small bowl; mix well. Evenly spread over top of meat loaves. Top each with 1/4 cooked onion. Bake for 45 to 55 minutes or until loaves are no longer pink in center.

*Substitute 1 pound lean ground beef.
