Prep. Time:     20 mins
Freezing Time: 2 hrs
Yield:             6 servings

Ingredients:

8 oz (250 g) Canadian Mascarpone cheese
4 cups (1 L) vanilla ice cream, slightly softened
12 Savoiardi biscuits (lady fingers)
1/4 cup (60 mL) strong coffee
Cocoa powder

Directions:

Cream the Canadian Mascarpone in a bowl using an electric mixer. Add ice cream in small quantities at a time. Mix well. Freeze for 10 minutes.

Dip the ladyfingers in coffee and place two cookies in each glass. Fill with ice cream mixture and sprinkle with cocoa. Freeze 2 hours.

Let stand at room temperature for about 15 minutes before serving.

Note: Can be made in a square pan.

For a lighter version, replace the mascarpone with light cream cheese

Recipe Tip:

Use hot chocolate mix as a substitute for coffee for a kid-friendly version. You can also use french vanilla or white chocolate ice cream instead of plain vanilla.
