Louise’s Maple Muffins

Ingredients:

Topping
1/4 cup (50 mL) packed brown sugar
1/4 cup (50 mL) flour
1 tbsp (15 mL) soft butter

Muffins
1 1/4 cups (275 mL) all purpose flour
1/2 cup (125 mL) white sugar
3/4 cup (175 mL) rolled oats
1 tsp (5 mL) salt
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) nutmeg
1/4 cup (50 mL) oil
2 eggs, beaten
1/2 cup (125 mL) milk
1/2 cup (125 mL) pure maple syrup


Directions:

Mix topping ingredients together in a small bowl until crumbly, and set aside.

In a large bowl mix together flour, sugar, rolled oats, salt, baking powder, cinnamon and nutmeg. In another bowl combine oil, eggs, milk and maple syrup. Add to flour mixture; mix just until moistened.

Fill greased muffin pans 3/4 full. Sprinkle topping over muffins. Bake at 375°F (190°C) for 20 minutes, or until golden brown. Makes 8 large or 12 small muffins.
