Succulent Pork & Beef Meatloaf

Meatloaf sounds so dull, so uninspired, so boring. But not anymore - let’s taste it again for the first time. Roasting the ‘loaves’ in a roasting tin allows room for potatoes, carrots or other vegetables to roast alongside, creating the perfect, warming, ‘one-pan’ meal.

Makes 2 small meat loaves, serving 4-6

4 slices soft white bread, cubed (about 3 cups)

3/4 cup milk

2 eggs, whisked

700g ground pork

300g ground beef

1/4 cup onion, finely chopped

1/4 cup celery, finely chopped

1 tbsp Worcestershire sauce

1 1/2 tsp salt

1/8 tsp pepper

1/2 tsp dried basil

1/4 cup sweet chilli sauce*

optional additions:

4 cups (500ml) chopped potatoes and or chopped vegetables, tossed in olive oil and sea salt

 

Preheat oven to 350F. Lightly grease a roasting pan and set aside.

Place bread crumbs in a large bowl and add milk, stirring well to combine. Stir in whisked eggs. Add remaining ingredients, except for the sweet chilli sauce, and mix well until thoroughly combined. Form mixture into two ‘logs’ and place on roasting tin. Place tin in center of oven and bake for 40 minutes. Remove at the 40 minute mark and spread loaves with sweet chilli sauce. Toss potatoes or other vegetables around base of loaves at this point, if desired. Bake for 20 minutes more, or until vegetables are tender and loaves are cooked through.

*Sweet chilli sauce is a slightly spicy, jam-like sauce that add a sweet kick to pork.
