Spicy Mixed Nuts

These spicy nuts are the perfect accompaniment to Christmas pre-dinner drinks.  For a gift, spoon the nuts into a small bowl and wrap so they are ready to serve. They will last at least a week in an airtight container.



Ingredients
2 tbsp vegetable oil                                                
2 tsp Black & Red Pepper
2 tsp garam masala
2 tsp ground ginger
1 tsp crushed chillies
2 x 100g packs  Brazil Nut Kernels
4 x 150g packs  Roasted Marcona Almonds
4 x 100g packs  Macadamia Nuts
2 x 100g packs  Pecan Nuts
2 tsp  Sea Salt, crushed

Instructions:
Preheat the oven to 180*C. Heat the oil in a large frying pan over a low heat. Mix the spices together, add to the pan and stir with a wooden spoon for 1-2 minutes to release their flavours.

Remove from the heat, add the nuts and stir until well coated with the spice mixture.
Sprinkle the nuts onto a baking tray in a single layer and roast for 15 minutes, or until beginning to brown.
Sprinkle with sea salt, then transfer to kitchen paper and allow to cool completely. Makes 14 x 100g bags.
