Spinach-Cheese Omelet

 3 Whole Eggs
 1 Tbsp Milk
 1/2 Cup Spinach, cooked and chopped
 1/2 Cup Cheddar Cheese, shredded
 To taste Salt
 To taste Pepper

Instructions:
Combine eggs, milk, salt and pepper in bowl.  Beat until frothy.
 Heat small, non-stick frying pan over medium heat.  Pour egg
mixture into heated frying pan.  As mixture sets at edges,
gently stir with fork, scraping bottom to allow uncooked egg to
run to the bottom.  Add spinach and continue to stir until egg is
cooked.  Level off top of omelet with fork and sprinkle on
cheese.  When cheese begins to melt, slide omelet out of pan
onto plate, folding in half.
This basic recipe can be altered in many ways.  One favorite is ham
and cheese.  Simply replace spinach with cooked cubed ham.
