Salmon on the BBQ

Ingredients
4 centre-cut salmon fillets, skin on (about
3-4 cm or 1 1/2 inches thick)
salt and freshly ground black pepper
vegetable oil for the grate
lemon wedges 


Directions
Preheat grill with burners on high until it's very hot, at least 15 minutes. Make sure grates are very clean by brushing with wire barbecue brush. Pat salmon dry with paper towel and sprinkle each fillet with salt, pepper. Brush with vegetable oil. Lightly oil grates.

Place salmon flesh side down on grill and cook three to four minutes. Gently turn fillets with spatula. Grill for another four minutes, or until fillets are almost opaque throughout yet still translucent in centre. Serve immediately garnished with lemon wedges. Serves 4.
