Curried Plantain and Red Potatoes

Ingredients
Serves 4 to 6 people - Also great the second day
1 Onion, diced
3 lbs. Red Potatoes, cubed with skins
6 Plantains, ripe, peeled, split, sliced
Red Pepper Sauce (to taste)
1-1/2 tbsp. Curry Powder
1 cup Raisins
1 cup Apple Juice (approximately)

Directions
We suggest serving the curried plantain and red potatoes on a bed of coconut basmati rice and with a large mixed green salad, which can be prepared at the same time as this recipe.

We prefer cooking the curried plantain and red potatoes in our microwave oven (on high), but it can be cooked in a conventional oven at 350 degrees F.

Clean, peel, and dice the onion and place in a large covered ceramic baking dish.  Add the hot red pepper sauce and mix well.  Cover the baking dish; place it in the oven and cook until the onions begin to become translucent.

Thoroughly wash the red skinned potatoes and remove any bad spots (leave the skins on for color). Cut the potatoes into 1/2 inch cubes (approximately) and add to the baking dish after the onions are cooked.

Peel the ripe plantains (use a knife to cut off the ends and slice the skin lengthwise).  Split the plantains lengthwise and slice each half into 1/4 inch thick semi-circles and add to the baking dish.  Add the curry powder and mix well to make sure that everything is uniformly covered.  Cover the baking dish and place back in the oven and cook until everything is hot.  This should take about 10 minutes in the microwave oven and about 20 minutes in a conventional oven.  We suggest mixing midway through this initial cooking time (remove from the oven to do this).

After the ingredients become hot, add some of the apple juice and all of the raisins and mix well.  Cover the baking dish and place back in the oven to finish cooking, mixing at intervals.  If all of the liquid apple juice in the baking dish has been absorbed when you remix, add more of the apple juice and mix again; cover and place back in the oven. 
When the potatoes and plantain are tender, remove from the oven.  If there is no liquid apple juice remaining in the baking dish, and you have some of the cup remaining, add a little at a time while mixing; it should be absorbed.

Serve on a bed of coconut basmati rice and garnish the plate with some fresh fruit slices, such as the kiwi shown in the photo.
