Pizza Sauce

Ingredients
1 -  28 oz. can Tomatoes, crushed
1 Onion, medium size, diced
1 tbsp. Garlic, crushed
2 Jalapeño Peppers, diced or thinly sliced
or
1/2 cup Peppers, Bell, diced
2 tsp. Oregano, dry

Preparation
We enjoy our pizza a little spicy, so we use the jalapeno peppers in the sauce.  If you prefer the sauce less spicy, use green bell peppers.  We also cook our pizza sauce in a covered glass bowl in the microwave oven so that it doesn't burn as it's thickening.

Wash, peel, and dice the onion and place in a covered glass pot or bowl.  Peel and dice the garlic and add to the pot.  Wash the peppers and remove the stem end.  Do not remove the seeds.  Dice the peppers and add to the pot.  Add the oregano.

Place the covered bowl in the microwave oven on "high" for about 5 minutes, or until the onions begin to become translucent.  If cooking on the stove top, sauté the veggies in a little water in the glass pot.

After the onions, garlic, and peppers are cooked, add the crushed tomatoes and continue cooking on "high" in the microwave oven until the sauce thickens.  If cooking on the stove top, simmer on low heat until the sauce thickens, stirring occasionally to prevent the sauce from sticking to the pot. When the sauce has thickened, it is ready to spread on our pizza.
